This tofu mince is meat-free but so flavourful, has great texture and is packed with plant protein! 🍃

Let me show you how to make a tofu mince that you can add onto anything you like... Rice, noodles, salads, it's so versatile and damn delicious!! ✨High Protein Vegan Plates✨

[Serves: 2-3]

Ingredients:
1 block (450g) extra firm tofu
Oil, to coat tofu (approx. 1 tbsp, I used an avocado oil spray)

Sauce:
2 tbsp light/regular soy sauce
3 tsp dark soy sauce (for colour)
1 tbsp brown sugar
1/8 tsp ground black pepper
1/4 tsp Chinese five spice
1/2 cup water
2 tsp cornstarch
1 tsp grated ginger
1 tsp minced garlic

Method:


1. Preheat your oven to 180°C fan forced. Line a baking tray and set aside.
2. Drain your tofu and remove any excess liquid. Using clean hands, crumble into a mince-like texture.
3. Transfer onto the baking tray and spray on or pour in your oil. Use a spoon to mix through then spread into one flat even layer.
4. Bake in the oven for 20-25 minutes or until lightly golden, tossing well at the halfway mark for even cooking. *Note: You only want it to be very lightly golden, otherwise it’ll become too hard.
5. In the meantime, add the light soy sauce, dark soy sauce, dark soy sauce, brown sugar, black pepper, five spice, water and cornstarch into a bowl and whisk well to combine.
6. Lightly coat a frypan with oil and fry the ginger and garlic over medium heat for 1 minute until fragrant and lightly golden.
7. Give the sauce another whisk (as the cornstarch tends to settle at the bottom) then pour into the pan.
8. Add in your tofu mince and cook on medium high for 2-3 minutes until sauce is thickened and tofu is. If needed, add in an extra splash of water to reach your desired sauce consistency.
9. Spoon on top of a bowl of rice, add on some greens, garnish and enjoy!
