  • 400ml vegetable stock

  • 1 handful of vegan shredded cheese

  • 1 tsp each of salt, pepper, nutmeg, and paprika

For the Tofu:

  • 400g smoked tofu, diced

  • 1 tsp paprika powder

  • 1 tbsp agave syrup

Toppings:

  • Chopped spring onions

  • Chili flakes

  1. Prepare the Tofu: In a pan over medium heat, sauté the diced smoked tofu until golden brown. Add the paprika powder and agave syrup, stir well, and cook for another 2 minutes. Set aside.

  2. Sauté Vegetables: In a large pot, melt the vegan butter over medium heat. Add the chopped onion and celery, cooking until softened.

  3. Create the Base: Sprinkle the flour over the sautéed vegetables, stirring continuously for 1-2 minutes to eliminate the raw flour taste.

  4. Add Liquids: Gradually pour in the vegan cream and oat/soy milk, stirring constantly to combine. Bring the mixture to a gentle boil.

  5. Cook Potatoes: Add the diced potatoes and vegetable stock to the pot. Reduce heat to a simmer and cook for about 15-20 minutes, or until the potatoes are tender.

  6. Blend the Soup: Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.

  7. Add Cheese and Seasonings: Stir in the vegan shredded cheese until melted. Season with salt, pepper, nutmeg, and paprika to taste.

  8. Serve: Ladle the soup into bowls, top with the sautéed smoked tofu, chopped spring onions, and a sprinkle of chili flakes. Serve hot and enjoy
